Ingredients:
3 Tablespoons dark chocolate 100% cocoa
2 cup (500 ml) almond milk
1 cup (90g) rolled oats
½ teaspoon vanilla extract
2 Tablespoons brown sugar
1 Tablespoon flaxseed meal
1 pinch of cinnamon
100g dark chocolate
3 Tablespoons almond milk
1 handful of goji berries
Cook:
- Cover the rolled oats with three cups of almond milk in a saucepan set over high heat. As the mixture thickens, add 12 cups of water as needed and bring to a boil. Cook for 3 to 5 minutes, stirring occasionally. Stir the vanilla and cocoa powder into the pan until well combined.
- Reduce the temperature to low. Stir in the cinnamon, sugar, and flaxseed meal to combine.
- In the microwave, combine three tablespoons of almond milk and the dark chocolate.
- The oatmeal should be served in two bowls, and some goji berries and dark chocolate ganache should be topped with it.
