Salad of Carrots And Celery Recipe

Ingredients:

Carrots – 150 gr.
Celery root – 130 gr.
5 tablespoons plain yogurt
Parsley – 15 gr.

Dressing:

1 medium orange
a pinch of salt
1 tbsp rice vinegar or apple cider vinegar
2 tbsp of extra virgin olive oil
some fresh chopped green herbs such as chives or parsely for topping

Cook:
Remove any parts of the celery that are discolored from the top and tail, then thinly slice the stalks diagonally. In a bowl, grate the carrots and add the sliced celery, raisins, and walnut halves. to prepare the dressing: After the orange has been squeezed, pour the juice and any remaining orange flesh into a jug and remove any pips. Stir in the extra virgin olive oil, salt, and rice vinegar. Mix everything together after adding the dressing to the salad. Use the chopped herb leaves as a garnish.
